I think Snape would have made the potion willingly not because he liked Lupin or wanted the fullmoon to be pleasant for him but to ensure that nothing happened to any other student like it almost happened to him. These are questions that we sadly can't answer very well. It seems unlikely that Dumbledore would have been able to track Remus down, offer him the position, get the name of the textbook Remus decided to use, and get the Hogwarts letters with supply lists sent out in the (presumably) short period of time between when Sirius broke out and when the news about Sirius broke to the public. ![]() So, Sirius would have escaped very recently. Harry gets his Hogwarts letter with his booklist (including a new Defense text) on his birthday, which is the same day that Sirius's escape is advertised on muggle television. I think Lupin teaching the same year that Sirius broke out was a coincidence. He was only persuaded to accept when Dumbledore explained that there would be a limitless supply of Wolfsbane Potion, courtesy of the Potions master, Severus Snape. Delighted to see the Headmaster, Remus was amazed when Dumbledore offered him the post of Defence Against the Dark Arts teacher. Once again, Albus Dumbledore changed the course of Remus Lupin’s life when he tracked him down to a tumbledown, semi-derelict cottage in Yorkshire. I'd assume that Dumbledore ordered Snape to make it it doesn't seem like something Snape would choose to do on his own to me, personally. The Wolfsbane Potion was a way to persuade Lupin to agree - Lupin only agreed to teach because Dumbledore told him he would get it.
